In a saucepan at low heat, heat the rice vinegar with sugar; blend well to dissolve the sugar 2. Add a pinch of salt; turn off the heat and cool off ☆How to Cook Rice: 1. Wash rice in a large fine mesh sieve over running water; exchange water quickly (repeat 3-4 times) 2. Transfer the rice over a rice cooker container 3. Fill clean water; leave at least for 30 min in the summer and 1 hr in the winter 4. Cook in rice cooker 5. Stir to mix the grains once cooked; steam for 15 min with the rid on ☆How to blend Seasoned Rice Vinegar and Cooked Rice: 1. Transfer the cooked rice over a sushi oke or a large flat plate 2. Pour seasoned rice vinegar over rice 3. Fold the rice using a shamoji which is a rice spatula in a vertical movement; do not smash the gains 4. Using a fan cool off the temperature of the rice quickly to shine the surface of the rice 5.
